Howdy friends! I’m sending this out a day earlier than usual so that you have plenty of time to plan for Cinco de Mayo festivities! You already knowwww I am obsessed with all things tacos. They’re some of my favorite recipes to create — I just love turning everything into a taco!! So, although my recipes are certainly not traditional or authentic, I gotchu covered for your taco party this weekend.
Before we get into the recipe roundup, let me answer a few questions I always get asked when I post a taco video. Because having a good base tortilla is honestly just as important as the taco fillings themselves.
Q: What brand of tortillas do you use?
A: I have a few favorites, depending on the type of taco and any dietary restrictions.
For a budget-friendly option, I love these Goya corn tortillas which come in a pack of 30 for like $4! If I want to splurge a bit more, I’ll buy the corn tortillas from Mi Rancho, Vista Hermosa or Mi Tierra (a MA-based brand).
For a grain-free option, try almond flour tortillas from Maria & Ricardo’s or Whole Foods. Siete has great ones too, but they’re a bit too big for my taco liking.
I hardly ever use flour tortillas, but most of the brands listed above, as well as the Mission brand, also offer flour tortillas.
Q: How do you warm up your tortillas?
A: I prefer a tortilla that has a bit of char and crunch to it, so I will typically place the tortilla directly onto my gas stove burner (at medium-low heat) and flip it every so often. If you don’t have a gas stove, you can place it on a dry cast iron skillet over medium-high heat for about 30-60 seconds per side. And if you prefer a softer tortilla, wrap a stack of tortillas in a damp paper towel and microwave for 30-45 seconds. Be sure to wrap your tortillas in a kitchen towel to keep them warm before serving.

Elote Tacos with Chipotle Chicken and Veggies: One of my most popular taco recipes and for good reason. These are a flavor explosion, and so satisfying.

Crispy Beef Tacos with Hidden Veggies: Bold chipotle flavor, melty cheese and some sneaky cauliflower rice to make it a full, well-rounded meal!
Serves: 12 tacos, Time: 40 mins
Air Fryer Bang Bang Shrimp Tacos: Another one of my most viral recipes, these tacos feature breaded shrimp tossed in a creamy, sweet & spicy sauce.
Serves: 10 tacos, Time: 22 mins
Chili Lime Salmon Tacos with Peach and Pepper Salsa: The best way to manifest summer. And you can totally substitute mango for the peach.

Crispy Cheesy Chipotle Chicken Tacos: Leveled up with a layer of crispy melted cheese on the tortilla, juicy chipotle chicken and homemade pico de Gallo.

Thai Chicken Tacos with Peanut Sauce: A fun fusion recipe for the peanut butter lovers, that features an asian-inspired slaw, peanut chicken and peanut sauce.

Buffalo Chicken Smash Burger Tacos: The smash burger taco trend…but with a spicy twist! Finish them off with a homemade ranch slaw, for a creamy & fresh touch.
